Creme Egg Pancakes
Creme Egg Pancakes have become something of an Easter ritual in our household and come Easter Sunday my sister and I are practically salivating. The happy marriage of Easter indulgence and Sunday brunch, these pancakes are a paschal feast.
Every year I give up processed sugar for Lent so these pancakes are my first taste of chocolate after a long Lent. It's quite a headstrong jump back into the sugar pool but oh so worth it!
The pancakes themselves are chocolate chip and have chopped up pieces of Creme Eggs in them. For added indulgence I make a batch of chocolate sauce - Easter is not a time for doing anything by half! This sauce is super easy to make - simply melt chocolate and stir in evaporated milk - and you have a handy future supply.
To assemble, stack your pancakes high, pour over chocolate sauce and garnish with a Creme Egg on top and scatter mini Creme Eggs around the sides. And ta-da! A bonanza of a brunch.
